3s will be faster more volts more speed , but the 1400 well hv shorter run time higher mah mean longer run time .

Judging by the mAh count and your thread over in the 16ths this is going in a 16th.
If this 16th is stock, 3S is only for short runs on relatively flat, smooth surfaces.
Any other use will result in your RC overheating.
I have a 16th Revo and am running 23/50 or 28/50 gearing depending on ambient temperatures with an aftermarket 60 amp ESC on 2S 2200mAh LiPo's. With this gearing it runs 30 and 45 MPH top end respectively... and is plenty fast.
Whatever it is I just said... I could be wrong.
I would be using it to bash around with. Doing drag races in my street and messing around with it on my driveway and grass. Would the 3s 1400 mah be fine? How do I prevent it from overheating?
3S would not be fine... as stated in post 3.
To stop the overheating you could need any combination of the following:
ESC
Motor
Spur gear
Pinion gear
Heat sinks
Usually by the time you regear the RC to solve the heat issue created by using a higher cell count you are going about as fast as you would with a 2S battery.
BTW, what is the C rating on these batteries you are interested in?

So when you say ESC, Motor, Spur gear, Pinion Gear, Heat Sinks what do you mean exactly? I am getting a heatsink for my motor and I have already put the extra pinion gear that came with the truck on.
So could I or could I not use the 3s 1400 mah battery?
ESC with higher ratings and gearing to get your temps under control. For what you are wanting to do, the included 23 is not going to be low enough to stop thermaling.
There is no such thing as magic gearing that works for everyone, the only thing that can tell you what gearing will work for you is a temperature gun.
