i honestly can't see why it would be a problem as long as the centre driveshaft is removed and the 2 front wheels a free wheeling but you will notice a lack of steering as with most 2wd's
i actually tried it yesterday! everything is fine. that's also what made me realize why i bought a 4wd!
It won't hurt the truck at all. But you will see a decrease in steering and handling capability.

Taking out the center driveline gives the slipper/center diff assembly the possibility of not keeping completely true and straight, you could either shatter a spur or the spline for the driveshaft will melt a hole of it's own in the center driveshaft area.
You'd probably be better off taking off the front driveshafts at the wheels. But that's just me.

it won't effect the diff as the main shaft floats on the diff output.
