A 2s lipo is about the same voltage, but it will provide a ton more amps. Amps aren't too important with the stock setup, but if/when you go brushless there is a HUUUGE difference.
EDIT: Speed on stock setup should be pretty much the same. The lipo will weigh a little less but I doubt you'd notice.
A quality 7-cell will beat a 2s lipo anyday. 2s lipo voltage is 7.4 volts, 7-cells is 8.4. Its close, but 7-cell still wins.

Correction: A fully charged 2s lipo is 8.4v on the nose. And with anything that pulls any decent amount of amps the lipo will hold up better under load. The EnerG 4600s are pretty much the exception (they hold voltage longer than most lipos, but when their amps dump they dump pretty hard).Originally Posted by VXL Beast
The lipo is going to be about the same because the 7cell will actualy be closer to 9 or so when fully charged. But will drop some what with a load. Chances are you will get a lot higher mah on the lipo therfore a much longer run time! So lipo is the way to go because it will be about identical in speed and power and as I said longer run times!
The only down side is much more expencive since you must buy a lipo charger and the batt!

To the original quesiton a lot depends on which 7 cell and which 2s you are talking about. I have a SMC 5000mah 2S that runs faster than my 7 cell Ener-G packs the 8 cell Ener-G pack beats the 2s lipo but not by much. In fairness the 2s lipo is new and fresh and the Ener-G packs have seen a LOT of cycles and close to the end of their life span.
