Half a turn seems to work best for me.
The blower fan fits without mods but its really not a quality piece of kit. Mine didn't seem to push a lot of air in the short time it lasted. You won't need the fan if geared reasonably well.

As long as the plastic retainers hold the balls in well then it doesn't matter if they are plastic. You would still get the benefit of aluminum knuckles.

Look into a Sidewinder 1/10th scale ESC. It dropped my ESC temps about 25F. Lots of information can be found on here.
Sorry to tell you but no ESC will stop the motor from overheating. You're either going to have to gear it down further or replace both of them. At least, that has been my experience. YMMV.
