Differential fluid is a silicone lubricant. The words you are asking about are somewhat interchangable. They come stock with 30000 weight fluid but I prefer 50000. Traxxas make a kit that includes 3 different weights if you want to give a few a try. You should fill the diff full because it slowly comes back out.

The purpose of a diff is to let the wheels spin at different speeds, this is required for going around a corner because the outside wheel has to travel a further distance than the inside wheel. Using a heavier fluid will make the diff try to drive the wheels more evenly, lighter fluid will let the diff action happen easier.
The trick is to find the right balance for your driving style and terrain. If the fluid is too light you will tend to "diff out" which is a term used to describe what happens when one tire loses traction and the diff sends all the power to that wheel. If it is too heavy your cornering performance goes down and the truck will tend to push thru the corners.
